CHICKEN JACK AND JILL

1 BREAST OF CHICKEN OR EQUIVALENT IN TENDERS CUT UP SMALL

SAUTE IN 2 T OIL UNTIL LIGHTLY BROWNED.REMOVE FROM PAN AND SET ASIDE.

IN REMAINING OIL, SAUTE 4 GREEN ONIONS, CHOPPED, 2 CLOVES OF GARLIC, MASHED.WHEN ONIONS BEGIN TO SOFTEN, ADD:

1 T JALAPENO PEPPERS, DICED.

1/4 C SOY SAUCE

1/4 C COCONUT MILK

1/4 C WATER

JUICE OF 1/4 LIME

1 C CHOPPED ZUCHINNI

 

 

ON MEDIUM HIGH ALLOW LIQUID TO COOK DOWN SLIGHTLY

ADD CHICKEN AND ZUCHINNI AND COOK 5 TO 10 MINUTES TILL A PIECE CHICKEN CUT INTO HAS NO PINK.

ADD 2 TCHOPPED CELANTRO AND ALLOW TO COOK IN 2 OR 3 MINUTES MORE.

ENOUGH FOR 2 SERVED OVER 1 C SPAGHETTI NOODLES EACH.

(DON'T LET THE CELANTRO THROW YOU IF YOU DON'T LIKE IT.YOU WILL NOT KNOW IT IS THERE AND THE FLAVOR IT ADDS IS VERY MELLOW.)
